As the weather gets warmer and summer approaches, peaches come into season. And as everyone knows, in season produce is cheaper which means you can find great deals and experiment with fun recipes like this Not Quit Nigella Sour Cream & Donut Peach Cupcake recipe. The recipe looks easy and there’s no messy frosting needed!

Sour Cream & Donut Peach Cupcakes
Makes 10
Ingredients
- 300g (2 cups) self-raising flour
- 3/4 cup caster sugar
- 80ml (1/3 cup) vegetable oil
- 1 large egg
- 175ml/6 fl oz sour cream
- 2-3 donut peaches, diced
- 2 tablespoons icing sugar
- a little ground cinnamon to shake on top
- 1/2 donut peach sliced to decorate
- 1/3 cup milk
Method
1. Preheat oven to 180°C and line a cupcake tray.
2. Sift the flour into a medium bowl, then add a pinch of salt and the caster sugar. In a jug, combine the vegetable oil, egg, sour cream, milk and whisk. Add the wet mixture and the peach pieces to the dry mixture and stir to only just combine. It will be thick and puffy so you will need to spoon it into the cases. Fill until 3/4 full or 7/8 full. I realise it sounds bizarre but I asked Mr NQN to fill it 7/8 full which was perfect for the domed look.
3. Bake for 25 minutes or until a skewer inserted comes out clean. Remove from the oven and set aside to cool slightly.
4. Sift icing sugar on top and shake a little ground cinnamon. Top with some pieces of fresh peach if desired.

Jenn from JustJENN recipes had the creative idea to use a ice cube mold as a chocolate mold. She made little chocolate lego men to use as cupcake toppers for her cookies and cream cupcakes. I love her idea because lately I’ve seen tons of fun ice cube molds by Fred & Friends including skulls and crossbones, battle ships, brains, and dentures. Any molded chocolate would make an easy and unique cupcake topper.

I guess I am a little late posting this in time for May Day but I am sure you could find another celebration to make this fun display for. This maypole cake from Martha Stewart consists of a cake, surrounded by cupcakes and topped with an inedible pole and pieces of ribbon. The flowers and festive colors make this cake and cupcake pairing perfect for spring!

Bleeding Heart Bakery of Illinois looks like my kind of bakery! Bright colors and yummy looking creations.
All of their pastries are cutting edge and thought provoking. All of their ingredients are local and organic. This sounds like a the perfect combination for some yummy creations.

Now onto the cupcakes! They have 2 categories of cupcakes – Plain Jane and Fancy Schmancy. There is only a 50 cent difference between the two. This months Plain Jane choices are Slash, Red Velvet , Carrot Cake with cream cheese frosting, Chocolate/peanut butter and Chocolate Raspberry. I vote for Chocolate Raspberry! And then for the Fancy Schmancy we have Strawberry Shortcake, Veruca Salt , Ginger Mint Mojito and Bananas Foster. I’m getting a tooth ache just thinking about these flavors!

Road trip anyone?

LeSportSac bags are always fun and unique, which is part of why I loved them so much. I currently have a few different styles and patterns but after coming across this print, I think I might need another one. You can never have too many bags right? Especially when this one is covered in cupcakes! The LeSportSac website offers the cupcake print on 23 different styles. Zappos, which doesn’t charge for shipping, has the cupcake print available in two styles, Erika which I have with a different patter; It’s a great sized bag even for everyday use. The other, slightly larger option is the Everygirl Tote. Both of the styles offered by zappos are show below.

Spring time is often a wet and muddy time of year. So what can you do with your kids outside to make the best of it? How about making some mud cupcakes! Check out this “recipe” from Family Fun.

The classic mud pie needs no improving, but there may be days when your kids want to get more creative with their dirty work. That’s when old kitchen supplies come in handy, for these decorative cupcakes or for a more utilitarian variation: Mud Bricks.
- Materials:
-
- Cupcake liners
- Cupcake pan
- Mud
- Nature objects (we used berries, flowers, and pebbles)
-
- Simply place liners in a cupcake pan and fill them with mud batter, then decorate the cakes with natural objects, such as berries, flowers, and pebbles.

We received these photos and this email from an ATC reader…
My daughter designed 3 cupcake tattoos. One for her, one for my Mom and one for myself. Hers is a regular cupcake, my Mom’s is a pirate cupcake, and mine is a mixture of the two. I am a tattoo artist and I did all three tattoos one afternoon. We love cupcakes and I am glad I found your site today. I would be really honored to have our tattoos showcased on your site.
Thanks!
Cupcake Mom :)
Thank you for sharing your cupcake tattoos with us! They are too cute! ;)

Why are we posting pictures of Chinese food? Because these little takeout boxes are actually full of cupcakes. Reader and ATC fan Amber writes:
I just wanted to share with you some cupcakes that I was able to make this past week. I just bought the new “What’s Up Cupcake book” and was so inspired! I made these for a friends Chinese food party she had and they were a huge hit!

While the news about Cakespy opening her own gallery broke last month, the Cakespy Shop grand opening was only just this last Saturday. Since I live down the street from Capitol Hill’s newest cupcake art space, I go to stop by and join the party.
Cakespy Shop was packed by a rotating crowd of well-wishers and art buyers. I expected there to be a good crowd (we do love our cupcakes and cute art in this town), but this was a really good showing even taking that into account.

I admit, the Cakespy appeal was probably helped just a tiny bit by the free Trophy Cupcakes and complimentary performance by Mr. Cakespy’s band, Exohxo. The cupcakes were delicious and adorably appointed with images from Cakespy’s “Scenes from Capitol Hill” series and Exohexoh’s charming melodies and singing violins made a lovely accompaniment.

Exohexoh: I can't believe that an 8 person band could fit in this store, but they did it.

I think the Malt Ball sounds amazing. It is truly original and I would really love to try it. That could be way more fun for “family movie night” than a box of malt balls :-) Cat

I love how everyone interprets things differently. A few months ago we posted The Periodic Table of Cupcakes according to Women’s Day. Over the weekend I came across this picture of someone else’s version of the Period Table Cupcakes. This would be such a fun project to take on for school or to try to earn some “brownie” (cupcake) points with a chemistry teacher!

My sister likes peanut butter. My sister also likes chocolate. What my sister does not like are peanut butter and chocolate combined in baked goods. You don’t have to tell me how crazy she is but for her taste buds, these are two ingredients that are both incredibly rich and when combined, they are too rich. Personally, I think chocolate and peanut butter go perfectly together. I came across this recipe for Peanut Buttercups with Peanut-Penuche Icing and I am dying to make them! And I have a feeling they might have the perfect chocolate to peanut butter ratio for my sister.

Ok, so it’s not exactly a cupcake but I couldn’t help but think of cupcakes when I saw these trash bags/liners. And who would argue with you if you said they were giant cupcake liners?
