Yesterday was my cousin’s 24th birthday! Happpppy Birthday Meghan!
Her lovely hubby made her cupcakes while she was at work and he was at home with their baby! So Sweet!
They were Chocolate Chip Cookie Dough Cupcakes. Aaron was nice enough to give me the recipe.
Chocolate Chip Cookie Dough Cupcakes
Ingredients
1 1/2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon sea salt
1/2 cup butter, softened
1/4 cup white sugar
1/2 cup brown sugar
1 egg
2 teaspoons vanilla extract
1 cup miniature semisweet chocolate chips
1 (18.25 ounce) box yellow cake mix
1 1/3 cups water
1/3 cup canola oil
3 eggs
Directions
Whisk together the flour, baking soda, and sea salt; set aside. Beat the butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Add 1 egg and the vanilla extract and beat until smooth. Mix in the flour mixture until just incorporated. Fold in the chocolate chips; mixing just enough to evenly combine. Form the dough into tablespoon-sized balls; place onto a baking sheet, and freeze until solid, about 2 hours.
Preheat an oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
Beat 3 eggs in a large bowl with an electric mixer to break up. Add the cake mix, water, and canola oil; continue beating for 2 minutes on medium speed. Spoon into the prepared cupcake liners, filling each 2/3 full. Place a frozen cookie dough ball on the top center of each cupcake.
Bake in the preheated oven until a toothpick inserted into the cake portion of the cupcake (not the cookie dough ball) comes clean, about 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
For the frosting he just used store bought frosting and whipped some milk into it to thin it out.

I got out of work early today and I said to myself , “I can make it to the thrift store before 5!” And I am glad I got out of work early. As i was searching primarily in the kitchen section I came across a single cupcake coaster and it was only 25 cents! I had to have it, but what does one do with one coaster??? I made it into a wall hanging!! I took some twine I had hanging around and glued it on the back of the coaster to make a loop so you can hang it on the wall. And here it is …
Such a good find!

WOW … is all I can say when I ate these yummy yummy in my tummy cupcakes. It’s the perfect mixture of sweet and tangy. So here it is … brace yourself, here is how I baked them!
First we start with the cupcake itself …
Chocolate Cupcake Recipe
Line muffin tin with cupcake liner, make about 24 cupcakes. Heat oven to 350 degrees. Strain cherry pie filling as best you can. Reserve the liquid from the filling to decorate with and set cherries aside.
Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water. Fold in cherries.
Fill cupcake liners 2/3 full. Bake for about 2o minutes or until a toothpick comes out clean.
Let sit for 5 minutes then put on cooling rack.
And on to the frosting….
Chocolate Cream Cheese Frosting
Place the cream cheese and butter in a large mixing bowl. Blend with an electric mixer on low speed until combined, 30 seconds. Stop the machine. Add the cocoa powder, extract, and confectioners’ sugar and blend with the mixer on low speed until the ingredients are moistened, 30 seconds. Increase the speed to medium and beat until the frosting is fluffy.
Once cupcakes are cooled completey you can frost them. I used a 1M tip to frost mine. You do it anyway you like. Once all frosted is all on you can go ahead and add a lil extra with the cherry filling. The technique i used was to put all of the reserved filling in a small disposable decorating bag and cut off a TINY piece of the tip, just enough for a thin line of filling. And then make lines over the frosting for a cool effect … and it adds a bit of a tang to the frosting!

A friend of mine said that she saw a brand of wine called Cupcake the other day. At the time I didn’t think much of it. Well later that day I was going through a bunch of my magazines and saw an advertisement for it. So i figured it was calling me to check it out … I went to their website Cupcake Vineyard. They have a great selection of wine and a blog where you can post your wine and cupcake pairings! I think the next time I am out and about I will have to take a look for this!

I found this wonderful recipe for French Toast Cupcakes a few weeks ago and just last night I got the time to make them. This is a great twist on two fabulous foods, french toast & cupcakes!
Shopping List
Loaf of Raisin Bread
Eggs
Real Maple Syrup
Cinamon
Milk
Foil Cupcake Liners
Vanilla
Line cupcake tins with 4 cupcake liners. Spoon a teaspoon of maple syrup into each liner. In a larger bowl break up 4 pieces of bread into pieces. In another bowl mix together 4 eggs, 1 tsp of vanilla, 1/2 tsp of cinnamon and a 1/2 a cup of milk. Once that is mixed ll together pour over the bread. Give a quick gentle stir to coat all of the bread. Let sit for about 5 minutes so the bread can soak up the egg mixture. Scoop the mixture into the cupcake liner evenly. Bake for 3o minutes in a 400 degree over. After they come out of the oven let cool for 5 minutes then dive in & enjoy!
A good twist on this would be to whip of a batch of cream cheese frosting and once they have cooled spread a thin layer on the cupcake and sprinkle with cinnamon. I think I want to make some more now! Yummy!



As I was traveling home from the Holidays I had to make the obligatory fast food stop (there is no fast food on Martha’s Vineyard), so my friend Heidi and I stopped at Burger King! As I was reading the Menu trying to decide what to get I saw that they had a Cupcake Shake … I didn’t indulge in it for the simple fact that it probably cost more than my whole meal and that I had just ingested enough calories for a month over the holidays. But I did find a few people on the web that did.

Happy New Year all you cupcake lovers! As I was out to dinner with my dear friend Heidi celebrating New Years Eve here on the great Island of Martha’s Vineyard we were walking by a candy store and I saw some sort of cupcake decoration from the window. As soon as I saw this I knew I had to make a pit stop there. The store is Good Ship Lollipop in Oak Bluffs, MA on Martha’s Vineyard.

As I was brainstorming of an idea to do for a blog tonight for my last day of Holiday Cupcakes, I was searching and thinking … what do we drink on New Years Eve, Champagne!!! And just last year I made a simple Champagne Cupcake with strawberry frosting. Here is the recipe that I used.
Shopping List
Preheat the oven to 350 degrees Fahrenheit. Line the cupcake tins with liner.
In a large bowl combine cake mix, 1 & 1/3 cups champagne, 3 egg whites , 1/3 cup vegetable oil, and the zest of one orange. Beat with an electric beater for 2 minutes. Spoon batter into cupcake liners, fill either one half or 3/4 of the way full for the perfect cupcake. Cook for 18-20 minutes.
While cupcakes are cooling you can start on the frosting. In a bowl cream 1/2 cup shortening and 1/2 cup butter until light and fluffy. Add vanilla and mix well. Gradually add 4 cups sifted confectioners sugar. Once that is all mixed beat in 2 tablespoons of milk. Stir in 1/2 cup of strawberry jam to the frosting … add more to taste if needed.
Once cupcakes are cooled you can frost them. Garnish with halved strawberries.
So yummy & moist!

Ahhh … finally home with my family in good ol’ New Hampshire. After a long day of traveling yesterday I was ready to get back to my parents house and settle in with a cup of hot chocolate, or maybe eggnog or even hot mulled apple cider, that would be perfect! Work has been soooo busy that I had time trying to fit in my Christmas Wrapping, but I am happy to say that it is all done and in honor of that I have found some gorgeous easy to make Bright Bow Cupcakes from the Wilton Website!

These are easily made by flattening spice drops into long strips! Easy way to decorate with a great outcome.
I know this is going to sound crazy, but I just ate my first Candy Cane of the season at my holiday work party today – soo yummy! In honor of this Candy Cane I have found a great cupcake for the candy cane’s little brother, the Starlight Mint! Such a cute idea for a cupcake! Once again this is from the Wilton Website.

As I sit here literally snowed in on the island of Martha’s Vineyard I can not think of anything better to do today than to decorate cupcakes and Bake It Pretty has all of the instruments to do just that. Here are some of my favorite Christmas items they have.

I have missed a day so i will be jam packing 2 posts into one today.
Holiday baking anyone? I know a lot of people who are starting their baking as we speak! And just as stayathomecupcake said the east coast is getting hit with a storm and what a better time to start all that baking! Here are a few good recipes & decorating ideas to try.
First off we have a lovely cupcake to make with your children. The Claus Cupcake from Disney’s Family Fun website.

Here is another fun filled cupcake idea. This one is very simple but very appealing. I found this Candy Cane Cupcake idea on the Wilton website.

A few add ins you could do for this cupcake could be to add a little bit of mint extract into the frosting or to break up candy canes and add them to the frosting as well.
I don’t think you would want to get in a Snowball fight with these cupcakes … it may get a little messy! But if you happen to please let me know what the outcome was! :-)
