FLORIDA – Lime Cupcakes with Mango Buttercream!

This delectable recipe was submitted by Marta of Sugar Crush Cupcakes.

For the cake:

• A basic vanilla cupcake recipe or boxed vanilla cake
• 1 large lime

For the Frosting:

• 2 sticks softened butter
• 1/4 cup milk
• 1 tsp. vanilla
• 6+ cups powdered sugar
• 1 ripe mango
• 1 lime

Prepare the cupcakes as directed for your basic vanilla cupcake recipe.  Add the zest and juice of a whole lime (if avaliable Key Limes can be used here) to the prepared batter and fold in until it is incorporated.  Bake at 350 degrees for about 15 minutes, or until a tester comes out clean.  Remove from oven and allow to cool.    While the cupcakes are cooling peel and dice one whole mango (about 1 cup).  Place the mango in a saucepan and add the juice of 1 lime.  On medium heat cook this down until the mango has become soft (stiring with a whisk helps this along), about 7-10 minutes.  When the mango peices have all broken down in the pot, transfer to a food processer and blend until smooth.  Set aside and allow to cool.   In a large bowl beat the softened butter until smooth.  Add two cups of the powdered sugar and beat until smooth.  Then add two more cups and beat until smooth.  Then add the milk and vanilla and two more cups of powdered sugar.  Once that is blended and smooth, add the cooled mango puree and blend.  Add more powdered sugar to reach the desired consistency.  Place frosting in a piping bag with a tip and frost the cooled cupcakes.  Decorate with a slice of lime.

“Every one is a closet wrestling fan,” says WWE heavyweight champ CM Punk. Maybe Monday Night Raw is your secret shame, or maybe you wear it loud and proud. Perhaps you hate it, but you have a boyfriend, husband, brother or best friend who can’t live without his/her weekly dose of manly soap opera. Whatever the case, like it or not, you know a little something something about “sports entertainment.” Over at Bake & Destroy I’m challenging you to tap into that side of you- the one that longs to clothesline everyone in front of you in line at the bakery to get the last cupcake. Your mission: create an amazing wrestling-themed dessert item. The payoff: a one-of-a-kind Bake & Destroy photo book autographed by the champ himself, CM Punk.

The rules are posted on the blog, so I won’t bore you with them twice. I hope by posting here I get a lot of fabulous cupcake entries, I’m trying my hardest to be fair but you know I have a soft spot for cupcakes and Roddy Piper. (Oh, and forget about Punk’s vote- he hates frosting!)

It’s cool to use someone else’s recipe as long as you credit them when you enter, but the photo you submit must be your own shot of your own decorating job. (I doubt there are many Macho Man Randy Savage cupcake photos floating around the web, but you never know.) Check the blog for all the details and good luck!

We had 17 contestants enter the Miss American Cupcake Contest. Since we did not get all 50 states we are just going to group all of the entries together and vote by leaving comments. The top 5 contestants will move on to the finals. Only one cupcake will be named Miss American Cupcake. I apologize in advance. I had so many different type of photo entries…some people submitted elaborate entries, and others sent in more than one snapshot. I tried my best to crop every one’s picture as close to the same size as I could get. Since everyone at least had a cupcake side shot…that is the type of picture I went with. I am currently working out the kinks in the voting process and preparing the contestants for your votes.
