A Cupcake Cake

This past summer I was fortunate enough to visit Charleston, SC; which was where I make photographer Diana Lauderdale.  Lucky for me her daughter shares a love of cupcakes and Diana had baked over 100 cupcakes for her daughter’s 13th birthday.  Of course she took pictures of these cupcakes which I ended up purchasing.  I purchased the beautiful print  above that I had framed and is actually brighter in person. Dianne shared the additional image below.  She has a myartspace page and I stumbled into her booth at the Charleston Farmer’s Market.

Amy Atlas Events

It is  hard to find the words to describe how much I love what Amy Atlas Events creates.  As soon as I saw the company’s website I thought of how much I would love to work for this company for a living, despite the fact that it has nothing to do with the Nutrition degree I will be earning in one month.  If someone ever asks me what my dream job would be I now know the answer is “working for Amy Atlas Events.”  All the pictures look like how I wish everyday of my life was, bright, cheerful, and everything going together but not necessarily matching.  Of course I also like the fact that they deal with cupcakes and that they make people happy on a daily basis.

Amy Atlas Events works with their clientele to create customized events that are an expression of the individual.  They are known for their dessert tables which almost look to good to eat. Amy Atlas Events is located in New York City and has a great blog, Sweet Designs, that is loaded with pictures, recipes, ideas and more! Just looking at the pictures from past events makes me wish I still leaved near NYC and that there was an event in my life that I could use as an excuse to work with Amy Atlas Events. Also she was featured in the Martha Stewart Weddings, Summer 2009 issue that was my first blog post.

5 Minute Cupcake …

One of my friends sent this to me Via email …

5 MINUTE CHOCOLATE MUG CAKE
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug (MicroSafe)

Add dry ingredients to mug, and mix well.  Add the egg and mix thoroughly.
Pour in the milk and oil and mix well…
Add the chocolate chips (if using) and vanilla extract, and mix again..
Put your mug in the microwave and cook for 3 minutes at 1000 watts.
The cake will rise over the top of the mug, but don’t be alarmed!
Allow to cool a little, and tip out onto a plate if desired.

I was thinking you could disperse this into a few smaller teacup mugs and make sort of a cupcake! I don’t think you would have to microwave it for 3 minutes, but this is something you would have to test out. Unfortunately we don’t have a microwave as my place so i cant experiment! But someday I will!!

i love your blog and i wanted to share some cupcakes i made recently for a friends birthday. vanilla cupcakes with butter cream frosting..the birds are  marshmallow fondant and the clouds are large sprinkles. they turned out really cute and then i couldn’t get anyone to eat them!

Pineapple Coconut Cupcakes!

This weekend my best friend Heidi and I made some yummy cupcakes! I wasn’t too sure about what kind to make, but my mom spoke up and said she wanted Pineapple Coconut Cupcakes and Mom’s always get what they want. :-)

Off to the store Heidi and I went to get the ingredients …

  • Yellow Cake Mix, Crushed Pineapple, Cream Cheese, Flaked Coconut, & Confectioners Sugar

And you can grab these items from your fridge and cupboards at home…

  • Vegetable Oil, Eggs, Butter, & Vanilla

And GO …

Drain the crushed pineapple and save the juice.

Follow the directions on the box of cake mix … substitute the water for pineapple juice (if you don’t have enough juice, just use as much juice as you have and use water for the rest).

Once you have filled the cupcake liners with the batter spoon crushed pineapple into each liner on top of the batter, make sure you start off with a little at a time because you want to be able to get it into all of the cupcakes. If you have more after all are filled disperse to your hearts content into the rest of the liners. ( Psst … you can also save some to throw into the frosting)

Throw em’ in the oven and bake according to box.

While those are cooking you can go ahead and start on the frosting. Make sure that the butter is  at room temperature (if you take it  right from the fridge you will have a hard time mixing the frosting).

Mix together one 8 ounce package of cold cream cheese , 5 tablespoons butter and 2 teaspoons of vanilla until light and fluffy. Gradually add 2 cups sifted confectioners sugar.

Once you have mixed this all together gently fold in about 3/4’s of a cup of Coconut! (if you want to add crushed pineapple in you can do it at this time)

Once the cupcakes have come out of the oven and have cooled all the way through you can go ahead frost and ENJOY!

My family LOVED these cupcakes! They gave em’ and A+!

This porcelain cupcake container is by kgrandey and available via etsy for $35.00.  According to the description, the cupcake container is slightly larger then an actual cupcake.  I think it’s great for holding small things like hair ties or the buttons that come with clothes that you never know what to do with but are afraid to throw out.

I don’t get to see her much so when they came to visit me her mom dressed her up in the clothes that I bought her.

Necco Wafers in Cupcakes

This is a technique that I have never heard of, adding chocolate Necco Wafers to chocolate cupcake batter for a unique texture.  According to Melody Kramer who tried this addition, the result is surprisingly delicious.   She crushed the Necco Wafers and then added them to the batter.  While they did not melt while baking the end result offered the texture she desired.

Cupcake Baker Costume

First I bought yardage of felt online in light pink and brown, I laid out some guesstimations as to how wide I wanted the diameter of the ‘icing’ to drape outward and the skirt length/volume of the ‘ripples’ for the cup. The rest thereafter was just taking things in to fit perfectly. Also, to add more cupcake volume/goodness, I added a second and third layer of ‘icing’ that would tie on across the bust and back. Felt is a very forgiving fabric and was so fun to work with! I topped off the ‘icing’ with an array of complimentary colored jimmies to complete the ensemble! And lastly, I created a fabulous headband with a giant, bead-adorned strawberry; whipped cream frills and a white ribbon burst for a touch of girly-charm.

Women’s Cupcake Shirt

There are so many cupcake shirts, dresses and pajamas in stores for little girls right now.   I went into my daughter’s closet today and counted 15 cupcakes shirts that I have bought for her!  I have looked long and hard to find a cupcake shirt for myself that doesn’t make me look like I raided her wardrobe.  I finally found one!

2009 Halloween Cupcake Reader Submissions – Part 3

Some cupcakes do scare me: super dry cake with face crushingly sweet frosting. These dear readers find their own scary cupcakes.  One in a Tim Burton inspired creation, the second as the victim to those seeking her sweetness!

I am an avid follower of the website and I have a huge cupcake obsession that is constantly fueled by the amazing cupcakey goodness I find there! I live in the UK and cupcakes are not as celebrated here as I think they should be. So, with this in mind, I decided to make a personal homage to the cupcake with a Tim Burton-esque cupcake costume for Halloween! It is entirely handmade, from the purple glittery cherry on my head to the handmade bows on my shoes! This is my first attempt at a handmade costume and I was so proud of my efforts that I wanted to share them with All Things Cupcake and fellow cupcake fans.

When I came across these cute cupcakes items from Victoria’s Secret Pink line I could not help but wonder how I had not seen them sooner.  Pink  has two cupcake images offered on a variety of underwear styles including hipster and boybrief.  The underwear can be purchased individually or as part of the 5 for $25 deal.  There is also a Super Bling Cupcake Tee that is $39.50 and would make a great Christmas gift!

I got cupcake necklace & resin cupcakes at Etsy & glued to sunglasses. Made my hat myself out of styrofoam. I also make the dogs costumes myself also out of styrofoam & lampshades. The real looking cupcakes I made out of insulating foam in a can. – Lisa from Huntington Beach CA (more pics)

Ghirardelli Cupcake Mix

My husband brought me home a nice little present from BJ’s Wholesale Club this weekend.  It was this box of Ghirardelli Triple Chocolate Cupcake Mix.

Recently I have been brave and tried some new scratch cupcake recipes but boxed mixes will always have a special place in my heart.   This box came with 2 powdered cake mixes,  2 powdered frosting mixes and liners to make 2 dozen cupcakes total.  Both mixes needed a few simple liquid ingredients.  Here’s the finished cupcakes:

These cupcakes were so yummy!   Although the recipe stated that each bag made 12 cupcakes, I ended up with 15 and had to resort to some Betty Crocker frosting to finish them off (that’s why you see 2 shades of brown).   We are also big frosting lovers in my house so if I had put on less I may have had enough for all 15. I added some chocolate sprinkles to a few so maybe these were actually quadruple chocolate cupcakes!    They tasted best the same night they were made because the chocolate chips in the cake were still melted.   I can’t wait to make the other batch!

I know this submission is kind of late, but I thought I would share anyway. I made rainbow cupcakes with Jack Skellington frosting. I know rainbows and halloween don’t usually go together, but I can’t help it, I love any and everything colorful and cupcake and I adore Nightmare Before Christmas, so I just combined my loves into a colorful and cute treat. I also have a cupcake tattoo on my foot.

Why are Cupcakes so Popular?

This NPR discussion looks at why cupcakes and cupcake shops have become so popular.  The explanation is that we are in an economic bubble similar to what the coffee industry went through.  Cupcake shops like Magnolia, in NYC, started the trend that quickly caught on.  Now cupcake shops are popping up all over the country.  The good news is that according to the this discussion, cupcakes are still going strong and we can expect cupcake shops to continue opening up.
