One of my co-workers made mini red velvet cupcakes yesterday for her class, so I decided to take advantage of this cupcake opportunity and take some photos for you all. She used Paula Deen’s recipe but swapped in another recipe for the cream cheese frosting. The cakes were delicious little bites; thanks Marina for sharing them with the staff!

Pink Sweetheart Cupcakes

Pink Sweetheart Cupcakes

I had meant to make chocolate cupcakes for Valentine’s Day, but the cupcakes became strawberry instead. There’s strawberry and strawberry syrup in the cake. I used a bit of food coloring to get the desired color and topped off the cupcakes with my most favorite cream (Cool Whip) and white chocolate hearts.
