Maple Nut Goodies Cupcakes

Maple Nut Goodies are an important food group in this household, so I’m not sure why I haven’t put them in cupcakes before now. But now that I have, there’s no going back, because these cupcakes were a HIT! I’m not sure I’ve ever received such rave reviews.

Here’s what I did:

I used a white cake mix (don’t tell!). The mix called for 1/3 cup of vegetable oil, which I replaced with real maple syrup, straight out of the tree. (Okay, not straight out of the tree.) This made the cupcakes a bit sticky, but the stickiness is well worth it.

I also plopped a Maple Nut Goodie right into each cupcake before baking. However, these sank to the bottom and caused the cupcakes to stick to their wrappers, so next time, I will cut the goodies into bits before putting them into the mix.

I baked as directed. In the meantime, I crushed up some salted peanuts and purchased some bottled caramel. For the frosting, I beat together 1 stick of butter, about 2 cups of powdered sugar, about a half cup of maple syrup, and a splash of half and half.

After the cupcakes cooled, I piped on some frosting. Then I sprinkled on some crushed peanuts. Then I drizzled on some caramel. Then I plopped another Maple Nut Goodie on top. And voila! The perfect sweet and salty Maple Nut Goodie cupcakes. Trust me. These are worth the effort!

Rainbow Splatter Cupcakes

Okay, now these are cool. My kids and I are going to give these a shot!

Here are the instructions that come with this Pinterest photo: Use white cake mix. Then divide batter into several containers. Add food coloring to each container. Then put some of your colored batter in each cupcake wrapper. Then drizzle other colors into the wrappers. Bake as directed!

Westie Cupcakes

I’m not sure which I love more–dogs or cupcakes. That’s why I’m quite so taken by these adorable “Westie Cupcakes” (Westie being a nickname for West Highland White Terrier) from Angelina Cupcake of Towcester, Northamptonshire. Almost too cute to eat! I recently participated in an adoption expo for our local animal shelter, and I wish I’d thought to bring along a batch of these! They would’ve found forever homes for sure!

Fuzzy Navel Cupcakes and other fun things

Check out these alcohol-inspired (and infused) cupcakes being offered by The Sugar Shack in Lansing, Michigan this week. Feel like a drink? Have a cupcake instead!

The “Southern Pride” cupcake has pecans and bourbon in the cake and is topped with a butter cream that is loaded with dried cherries, pecans, and bourbon. Whoah!

The “Fuzzy Navel” is yellow cake with oranges and peaches baked in, and is frosted with a peach lemon butter cream. Yum! I think I’m going to attempt a batch of these!

And the innocent looking “Tooty Fruity” is a yellow cake loaded with rum soaked fruit and topped butter cream, sprinkles and a cherry.

Eat responsibly! ;)

I think I just figured out how to get my kids to eat their peas and carrots. Who needs a turkey dinner with all the fixin’s when she could just have this kind of turkey dinner? Complete with buttery mashed potatoes and cherry pie! So clever!
