Ok, so it’s not even Halloween yet but I had to post about these lovely holiday cupcake papers from Sweet Cuppin Cakes Bakery & Cupcake Supplies because they’re so very, very cute that I actually felt a tinge of holiday spirit in my icy, black heart.

I have never been a fan of the typical red-and-green Christmas, but the pink and silver Christmas stuff gets me every time. If I could live in a world of sugar plum fairies and crinkle-eyed Santas I might never post another cuss word on my blog again.

But alas, baking gingerbread cupcakes in these pretty liners is as close as I’ll ever to get becoming a snow queen. Ah well, close enough.

Cupcake Art Exhibition

Adelle sent us these pictures from the recent art exhibition they had at the school she is a teacher at. It was cupcake themed! The first picture is a giant cupcake Adelle made out of paper mache. The second picture is of some real cupcakes made by the food technology staff, which were eaten on opening night.

Mini Cocoa Cupcake Kabobs

Mini Cocoa Cupcake Kabobs

Ingredients:

  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1/3 cup HERSHEY’S Cocoa
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water
  • LICKETY-SPLIT COCOA FROSTING(recipe follows)
  • Blue sprinkles or sugar nonpareils and/or decorating frosting
  • Wooden skewers
  • Marshmallows
  • Strawberries

Directions:
1. Heat oven to 350°F. Spray small muffin cups (1-3/4 inches in diameter) with vegetable cooking spray.

2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in medium bowl. Add egg, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Fill muffin cups about 2/3 full with batter.

3. Bake 10 minutes or until wooden pick inserted in center comes out clean. Cool slightly; remove from pans to wire racks. Cool completely.

4. Frost with LICKETY-SPLIT COCOA FROSTING. Garnish with blue sprinkles and/or white frosting piped onto cupcake in star pattern. Alternate cupcakes, marshmallows and strawberries on wooden skewers. About 4 dozen cupcakes.*

* Number of kabobs will be determined by length of skewer used and number of cupcakes, marshmallows and strawberries placed on each skewer.

LICKETY-SPLIT COCOA FROSTING

3 tablespoons butter or margarine, softened
1/4 cup HERSHEY’S Cocoa
1-1/4 cups powdered sugar
2 to 3 tablespoons milk
1/2 teaspoon vanilla extract

Beat butter in small bowl until creamy. Add remaining ingredients; beat until smooth and of desired consistency. About 1 cup frosting.

    5 servings, two taco cups each
    1 lb. ground beef
    1 pkg.  (1-1/4 oz.) TACO BELL® HOME ORIGINALS® Taco Seasoning Mix
    1 can (10 oz.) refrigerated buttermilk biscuits
    1/2 cup  KRAFT Shredded Cheddar Cheese

    PREHEAT oven to 400°F. Cook meat with seasoning mix as directed on package. Press biscuits onto bottoms and up sides of 10 (2-1/2-inch) muffin cups; fill with meat mixture.

    BAKE 15 min. Sprinkle with cheese. Bake an additional 2 to 3 min. or until cheese is melted.

    After John McCain’s frightening announcement of Sarah Palin as his running mate I felt compelled to do something to let people know that although a woman in office will always be a dream of mine- this woman in office is a total nightmare. I was a big Hillary supporter, but that ship has sailed and I’m throwing my support in Obama’s direction. And being your  friendly neighborhood baker and destroyer, Obama cupcake toppers are the best way I know how to do that.
